Quesadilla Grande Recipe
Melted jack and cheddar cheese with pico de gallo (optional) in a large flour tortilla, garnished with lettuce and sour cream on the side, add on steak or chicken as a delicious change!

Mix Ingredients
In a bowl, combine the diced tomatoes, red onion, cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.
Cooking Quesadilla
Assemble Quesadilla
On one half of each tortilla, sprinkle half the jack cheese and half the cheddar cheese. If using, add the cooked steak or chicken on top of the cheese. Optionally, add pico de gallo on top of the meats.
Cook the Quesadilla
Fold the tortillas in half to cover the filling. Heat a non-stick skillet over medium heat and place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side until the tortillas are golden brown and the cheese is melted.
Serving
Plate and Garnish
Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with shredded lettuce and sour cream on the side. Optionally, add extra pico de gallo on top.
