Method

Cooking the Pozole

    Prepare the Pork

    In a large pot, combine the pork shoulder, water, whole onion, and garlic cloves. Bring to a boil over medium-high heat.

    Simmer

    Once boiling, reduce the heat to low and cover. Let it simmer for about 2 hours, or until the pork is tender.

    Add Hominy

    After the pork is tender, remove it from the pot and shred it. Add the hominy and shredded pork back into the pot. Stir in the oregano.

    Final Simmer

    Let the soup simmer for an additional 30 minutes, allowing all flavors to meld. Season with salt to taste.

Preparing the Garnishes

    Chop the Vegetables

    Finely chop the red onion, red cabbage, and lettuce. Slice the radish into thin rounds.

    Prepare the Limes

    Cut the limes into wedges for serving.

Serving the Pozole

    Ladle the pozole into bowls and top with chopped garnishes. Serve with lime wedges on the side for added flavor.
