Choose Your Protein

Select one of the protein options: Chicken, Steak, Portabella, Shrimp, or Mixed Vegetables.

Marinate Protein

In a bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, salt, and black pepper. Add your chosen protein and coat it well. Let it marinate for at least 30 minutes.

Cooking

Cook the Protein

Heat a grill or skillet over medium-high heat. Add the marinated protein and cook for 5-7 minutes on each side (for chicken and steak), or until shrimp is pink and cooked through. For Portabella, grill for about 4-5 minutes on each side until tender. Remove from heat.

Sauté Vegetables

In the same skillet, add a little olive oil if needed, and sauté the sliced onions and bell peppers (and zucchini if using) for about 5-6 minutes until they are tender.

Assemble Fajitas

Warm the tortillas in a pan or microwave. Layer with your cooked protein, sautéed vegetables, sliced pineapple, sour cream, and guacamole. Garnish with fresh cilantro.
