Preparing Tortilla Chips
Cut and Fry Tortillas
Cut each corn tortilla into 6 wedges to make chips. Heat the vegetable oil in a large frying pan over medium heat until hot. Fry the tortilla wedges in batches until they are golden and crispy, about 2-3 minutes per batch. Use a slotted spoon to remove the chips and drain them on paper towels. Sprinkle with salt while still warm.
Assembling Nachos
Layer the Ingredients
On a large serving platter, create a layer of the fried tortilla chips. Drizzle half of the queso Amarillo over the chips, followed by the black beans, shredded lettuce, and diced tomatoes. If desired, add the shredded beef or chicken at this stage. Drizzle the remaining queso Amarillo on top.
Add Sour Cream
Top the nachos with dollops of sour cream. Optionally, you can sprinkle with additional toppings such as jalapeños or green onions.
