Potato Preparation

    Prepare the Potatoes

    Wash and peel the Russet potatoes, then cut them into thin strips (about 1/4 inch thick).

    Soak the Potatoes

    Place the cut potatoes in a large bowl and cover them with cold water. Add 1 tablespoon of salt and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispy.

    Drain and Dry

    After soaking, drain the potatoes and pat them dry with paper towels to remove any excess moisture.

Frying

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for best results.

    Fry the Potatoes

    Carefully add a batch of dried potato strips to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy.

    Drain the Fries

    Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. Sprinkle with 1 teaspoon of salt while they are still hot.

    Repeat

    Repeat the frying process with the remaining potato strips until all are cooked.

Serve

    Serve with Ketchup

    Serve the hot fries immediately with a side of ketchup for dipping.
