Preparation of Ingredients
Prepare the Proteins
If using chicken, slice the chicken breast into strips. For steak, slice against the grain into strips. For shrimp, ensure they are peeled and deveined.
Chop the Vegetables
Slice the bell peppers and onion into thin strips. Mince the garlic cloves.
Cooking
Cook the Protein
In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Add the chicken or steak or shrimp and season with fajita seasoning, salt, and black pepper. Cook until the chicken is no longer pink (about 5-7 minutes for chicken, 4-5 minutes for steak, or 3-4 minutes for shrimp). Remove protein from skillet and set aside.
Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil, then add the sliced onions, bell peppers, and minced garlic. Sauté until softened and slightly caramelized, about 5-6 minutes.
Assembly
Combine and Heat
Return the cooked protein to the skillet with the sautéed vegetables. Stir to combine and heat through for an additional 2-3 minutes.
Serve
Warm the flour tortillas in a dry skillet or microwave. Serve the fajita mixture with warm tortillas, sour cream, guacamole, fresh cilantro, and lime wedges on the side.
