Carnitas Preparation

    Prepare the Pork

    Trim any excess fat from the pork shoulder and cut it into large chunks.

    Season the Pork

    In a large bowl, combine the salt, black pepper, cumin, and oregano. Rub this mixture all over the pork chunks.

    Sear the Pork

    In a large Dutch oven or heavy pot, heat a bit of oil over medium-high heat. Add the seasoned pork and sear on all sides until browned, about 5-7 minutes.

    Add Aromatics and Liquid

    Add the whole garlic cloves, halved onion, orange juice, lime juice, and chicken broth to the pot. Stir to combine.

    Braised Cooking

    Bring the mixture to a simmer, then cover and reduce heat to low. Cook for about 3 hours, or until the pork is tender and shreds easily with a fork.

    Shred the Pork

    Remove the pork from the pot and let it cool slightly. Shred the pork using two forks.

    Crisp the Pork (optional)

    For crispy carnitas, spread the shredded pork on a baking sheet and broil for about 5-7 minutes until the edges are crispy.

Plato Fresco Preparation

    Prepare the Fresh Ingredients

    Chop the fresh cilantro, dice the tomatoes, and finely chop the red onion.

    Combine Ingredients

    In a bowl, combine the chopped cilantro, diced tomatoes, and red onion. Squeeze the juice of one lime over the mixture and toss gently.

    Serve

    Serve the braised pork carnitas topped with the plato fresco for added flavor.
