    Prepare the Pork

    Cut the pork shoulder into large chunks, about 2 inches each. Season the pork chunks with salt, black pepper, cumin, paprika, and cayenne pepper, ensuring they are evenly coated.

    Sauté Vegetables

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute until fragrant.

Cooking

    Brown the Pork

    Increase the heat to medium-high and add the seasoned pork chunks to the pot. Brown the pork on all sides, about 8-10 minutes.

    Add Remaining Ingredients

    Add the diced tomatoes, chopped jalapeño, and chopped bell pepper to the pot. Pour in the chicken broth and bring the mixture to a simmer.

    Braise the Pork

    Reduce the heat to low, cover the pot, and let it braise for about 2 to 2.5 hours, or until the pork is tender and easily shreds with a fork.

Serving

    Finish and Serve

    Once cooked, shred the pork in the pot using two forks. Stir to combine with the sauce. Serve hot, garnished with chopped cilantro and lime wedges on the side.
