California Fries Recipe

Prepare the Potatoes
Wash and peel the russet potatoes, then cut them into thin fries.

Season the Fries
Remove the fries from the oil and drain on paper towels. Season with salt to taste while still hot.
Queso Blanco

Prepare the Queso Blanco
In a saucepan over medium heat, combine cream cheese and heavy cream. Stir until the cream cheese is melted.

Add Cheese and Spice
Gradually add Monterey Jack cheese, stirring continuously until melted and smooth. Stir in diced green chilies, garlic powder, and salt to taste.

Keep Warm
Reduce heat to low and keep the queso blanco warm until ready to serve.
Queso Amarillo

Prepare the Queso Amarillo
In another saucepan over medium heat, combine cheddar cheese and heavy cream. Stir until the cheese is melted.

Add Spice
Stir in diced jalapeño peppers, onion powder, and salt to taste.

Keep Warm
Reduce heat to low and keep the queso amarillo warm until ready to serve.
Assembly

Assemble the California Fries
On a serving platter, layer the hot fries. Pour the queso blanco evenly over the fries, followed by the queso amarillo.

Top with carne asada or fajita chicken and sprinkle with finely diced red onion.

Serve the California fries hot, garnished with additional toppings as desired.
