Preparation
Prepare the Protein
If using shredded beef, ensure it's cooked and shredded. If using shredded chicken, cook chicken breasts until fully cooked, shred, and set aside.
Cook the Rice
Prepare Mexican rice according to package instructions. This usually involves simmering rice with water and spices until tender.
Heat the Black Beans
In a small saucepan, heat the black beans over medium heat until warmed through, about 5 minutes.
Prepare Pico de Gallo
If not using pre-made pico de gallo, dice tomatoes, onions, jalapeños, and cilantro. Mix together with lime juice and salt to taste.
Make Crema Fresca
In a bowl, mix sour cream with a splash of lime juice and a pinch of salt to taste.
Assembly
Layer the Ingredients
In a large bowl, start with a base of Mexican rice, then layer on the black beans, followed by shredded beef or shredded chicken.
Add Cheese and Vegetables
Next, sprinkle queso blanco on top, followed by a generous scoop of pico de gallo.
Finish with Sauce and Toppings
Drizzle crema fresca over the top and garnish with chopped cilantro. Serve with lime wedges on the side for squeezing over the bowl.
