Prepare the Salmon

Marinate the Salmon
In a small bowl, mix together olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Let it marinate for at least 15 minutes.

Cook the Rice
Add the rice to the pot and stir for a couple of minutes. Pour in the chicken broth and tomato sauce, and season with salt. Bring to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes or until the rice is cooked and liquid is absorbed.

Assemble the Dish

Plate the Dish
On a plate, place a generous serving of Mexican rice, top it with a salmon fillet, and spoon the pineapple salsa over the salmon. Serve immediately.
