Cheese Selection
Temper & slice cheeses
Remove all cheeses from refrigeration 30–45 minutes before serving to come to room temperature; this improves aroma and texture. While resting, place the cheeses on a clean cutting board. Slice the Manchego into 6–8 thin wedges. Cut the Brie into 6–8 triangular wedges, leaving the rind intact. Crumble or cut the Stilton into several bite-size chunks. Slice the chèvre log into 8 rounds, leaving a couple whole for visual interest.

Wash and dry the grapes; leave on small stems or remove as preferred. Halve fresh figs lengthwise (or thinly slice dried figs). Quarter dried apricots. If Marcona almonds are not already toasted, warm a small skillet over medium heat and toast the almonds, stirring, for 3–4 minutes until fragrant; cool completely before plating.

Choose a large wooden board or platter. Arrange cheeses with space between each type to allow room for accompaniments. Place the Manchego and Brie on opposite sides, the blue near the Brie (for pairing), and the chèvre near the fig jam. Fan out baguette slices and crackers in small piles. Tuck clusters of grapes, fig halves, and dried apricots around the cheeses. Scatter toasted Marcona almonds in small piles. Put honey, fig jam/quince paste, and mustard in their ramekins and place them within reach. Nest a rosemary sprig near the Brie for aroma and garnish. Finish with a light scatter of freshly cracked black pepper over the chèvre and a small drizzle of honey over one wedge of Brie if desired.
Give a brief presentation tip: label each cheese with small cards or toothpicks naming style and origin, and provide a separate knife or spreader for each cheese to avoid flavor mixing.
