Make syrup

Combine water and granulated sugar in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture just reaches a simmer (do not boil vigorously).

Remove from heat, add fresh mint leaves, and steep for 15 minutes to infuse flavor.

Strain out the mint leaves through a fine mesh sieve, pressing gently to extract liquid. Let syrup cool completely. Refrigerate in a sealed container for up to 2 weeks.

Virgin Mojito (per 1 serving)

Prepare glass and muddle

In a sturdy highball or Collins glass, place the fresh mint leaves (about 10 leaves) and the fresh lime juice (1 oz). Add the mint simple syrup (0.75 oz). Using a muddler or the back of a spoon, gently muddle the mint and lime just enough to release oils from the mint and combine flavors — avoid shredding the mint to prevent bitterness.

Add ice

Fill the glass with crushed ice, leaving about 1/2 inch at the top for soda.

Top with club soda

Pour club soda (about 4 oz) gently over the ice to preserve carbonation. Use a long spoon to stir once or twice to combine syrup and juice with the soda.

Garnish and serve

Garnish with a lime wedge and a fresh mint sprig. Serve immediately with a straw.
