Tea Base

Method

Tea Base

1

Bring water to a boil

Pour 8 cups of fresh cold water into a medium saucepan or kettle. Bring the water to a rolling boil over high heat.

2

Steep the tea

Remove the water from heat. Add 6 black tea bags (or the loose-leaf equivalent: ~6 teaspoons). Cover the pot and let the tea steep for 5 minutes for a clear, brisk iced tea; steep 6–8 minutes for a fuller-bodied brew. Do not over-steep beyond 8 minutes to avoid excessive bitterness.

3

Remove tea leaves/bags and cool

Lift out the tea bags, or strain the loose leaves, gently pressing the bags against the pot with a spoon to release trapped liquid (optional). Transfer the brewed tea to a heatproof pitcher. Let the tea cool at room temperature for 15–20 minutes to reduce steam and then place it in the refrigerator until chilled, about 45–60 minutes.

4

Adjust strength (optional)

Taste the chilled tea. If it is too strong, stir in up to 2 cups of cold water to reach your preferred strength. If using concentrated brew and you want a lighter tea, dilute accordingly.

Optional Finish & Serve

5

Prepare glassware: Fill glasses with ice cubes (about 1 cup ice per serving).

6

Garnish and serve: Pour the chilled unsweetened tea over the ice. Add a lemon slice and a mint sprig to each glass if desired. Serve immediately.

7

Storage: Refrigerate any leftover tea in a covered pitcher for up to 4 days. Stir before serving if diluted earlier; add fresh ice and garnishes as needed.
