Prepare base
Mix juices
In a pitcher or mixing glass, combine 2 cups pineapple juice and 2 tablespoons fresh lime juice. Taste and add up to 1 teaspoon simple syrup if you prefer a slightly sweeter drink. Stir until combined.
Muddle mint
Bruise the mint
Place about 8–10 fresh mint leaves into a sturdy glass or the pitcher. Gently clap the leaves between your palms to release oils, then lightly muddle in the glass or with a muddler 3–4 times — just enough to release aroma but not shred the leaves. Add the muddled mint to the pineapple-lime mixture and give a gentle stir.
Assemble and carbonate
Combine and chill
Fill two serving glasses with ice (about 1/2 cup ice per glass). Divide the pineapple-mint mixture evenly between the glasses (about 1 cup of mixture per glass).
Top with soda
Top each glass with 1/2 cup 7-Up (total 1 cup for both). Stir gently once to combine, preserving carbonation.
Garnish and serve
Garnish each glass with a lime wheel or wedge and a pineapple wedge on the rim. Slap a small mint sprig between your hands to release aroma and add it as a garnish. Serve immediately.
