Make the syrup

Combine 1 cup water and 1 cup granulated sugar in a small saucepan. Bring to a gentle simmer over medium heat, stirring until sugar fully dissolves (about 2–3 minutes). Remove from heat.

Add 1/2 cup fresh mint leaves to the hot syrup, pressing them gently with a spoon to submerge. Let steep for 15–20 minutes off the heat to infuse mint flavor, tasting after 15 minutes. Strain out the mint leaves through a fine mesh sieve, discard leaves, and cool syrup to room temperature. Store in the refrigerator for up to 2 weeks.

Prepare the glass

Chill a highball or Collins glass by filling it with ice water while you mix the drink, or place in the freezer for a few minutes.

Muddle mint

In a cocktail shaker, add 6 fresh mint leaves and 0.75 oz mint simple syrup. Gently muddle once or twice — just enough to bruise the leaves and release aroma, avoid over-muddling which can make the drink bitter.

Shake

Add 2 oz gin, 3 oz fresh grapefruit juice, 0.5 oz fresh lime juice, and a handful of ice (about 1 cup) to the shaker. Cap and shake vigorously for 10–12 seconds until the shaker is cold and slightly frosted.

Strain and serve

Discard ice water from the chilled glass. Fine-strain the cocktail into the glass over fresh ice to remove mint bits and any pulp. If you prefer a lighter drink, top with 1 oz club soda and give a gentle stir (1–2 rotations).

Garnish

Express a grapefruit twist over the drink to release oils, then rub the twist on the rim and drop it in (or use a grapefruit wedge). Add a fresh mint sprig as garnish, lightly clap it between your palms first to wake the aroma.

Serve immediately and enjoy. The cocktail yields bright citrus-forward flavors balanced by herbal mint and the botanical backbone of gin.
