Rice
Cook and prepare rice (advance step)
Cook long-grain white rice according to package instructions until just tender. Spread rice on a baking sheet and cool completely (preferably refrigerate at least 2 hours or overnight) so grains are dry and separate. Before stir-frying, fluff rice and toss with 1 tablespoon vegetable oil to coat grains and prevent clumping.

Add thawed peas and the white parts of the green onions. Stir-fry 1 minute to heat through and combine flavors. Transfer vegetables to the side or remove briefly if your pan is crowded.

Sauce & Frying
Increase heat to high. Add a touch more oil if the pan is dry. Add the cooled, oiled rice in an even layer. Let rice sit untouched for 30–45 seconds to get a little color, then begin tossing or stirring to separate grains. Work in batches if necessary to avoid overcrowding.
Pour soy sauce and oyster sauce over the rice in a thin stream while stirring to distribute evenly. Continue stir-frying 2–3 minutes so rice absorbs the sauce and heats through.
Return the cooked vegetables and scrambled egg to the rice. Stir to combine thoroughly, breaking up any clumps of rice, and fry another 1–2 minutes so everything is hot.
Drizzle sesame oil over the rice, sprinkle white/black pepper and salt, and toss to combine. Taste and adjust seasoning with additional soy sauce or salt if needed.
Finishing
Turn off heat. Stir in sliced green onion greens and toasted sesame seeds. Transfer fried rice to a serving dish and serve immediately.
