This is a Nigerian delicacy made with Ogbono seed - Irvingia gabonensis or okro cooked with beef, shrimps, fish, in a light slimy broth seasoned with spice mix, palm oil and served with Amala, Poundo, or Garri.

Prepare and cook beef

Rinse the beef and place in a pot with about 1 liter (1000 ml) of the water, 1/2 tsp salt and 1/2 of the chopped onion (reserve remaining onion). Bring to a boil over medium-high heat, then lower to a simmer and cook until tender (about 45–60 minutes depending on cut). Skim foam as needed.

Add fish and shrimp

When the beef is nearly tender (last 10 minutes), add the smoked fish (break into chunks) and the shrimp. Add the remaining water (about 500 ml) if necessary to ensure you have about 1.2–1.5 L stock. Continue simmering gently for 8–10 minutes until shrimp turn opaque and fish is warmed through. Taste and adjust salt; add the bouillon cubes and 1 tsp salt in total (reduce if using salty smoked fish). Remove large bones if any from fish.

Aromatics & Seasoning

While proteins simmer, finely chop the remaining onion and pepper. If using garlic, ginger and iru, mash or mince them together. In a small bowl combine ground crayfish and ground pepper so they are ready to add. Reserve a few slices of onion for garnish if desired.

Ogbonno / Okro & Thickeners

If using ogbonno (ground seed)

Toast the ground ogbonno briefly in a dry pan over low heat for 1–2 minutes to bring out aroma (optional). Mix the 80 g of ground ogbonno with about 120 ml of cool water to make a smooth slurry (no lumps). Slowly stream the ogbonno slurry into the simmering stock while stirring continuously to avoid clumping. Reduce heat to low and simmer gently for 4–6 minutes until the broth thickens and becomes slippery. Do not vigorously boil, or the slimy texture will reduce.

If using fresh okro

If you chose okro instead of ogbonno, add the chopped okro directly to the simmering stock after the proteins are cooked. Simmer on low for 6–8 minutes, stirring occasionally, until the okro releases its mucilage and the broth becomes slightly viscous. For a smoother texture, blend half the okro before adding and stir back into the pot.

If you want a mixed texture, you can combine both: use 40 g ogbonno plus 100 g okro, adjusting slurry/water proportionally and following both steps above.

Fat & Finishing

Add palm oil to the pot: pour in 4 tbs of palm oil and stir gently to combine. Add the ground crayfish, remaining chopped onion, ground black pepper, seasoning powder (if using) and the optional iru now. Stir and let cook on low for 3–5 minutes so flavors marry. Taste and adjust salt or bouillon.

Add the greens: fold in the uziza/scent leaves (or spinach) and simmer for another 1–2 minutes until wilted. Turn off heat. If desired, squeeze a little lime or lemon (1/2 piece) for brightness and stir.

To Serve

Portion the swallow (amala, poundo, or garri) into 6 servings according to package instructions or by reheating prepared swallow. Serve the hot ogbonno/okro soup ladled over or beside each swallow portion. Garnish with reserved onion slices and extra ground pepper or chopped uziza leaves if desired.
