Method
Prep Beans
Soak and peel (if using dried black-eyed peas)
Rinse 2 cups dried black-eyed peas well. Soak in plenty of water for 4–6 hours or overnight to soften. After soaking, rub the peas between your hands or use a coarse sieve to remove skins, then rinse repeatedly until most skins are gone. Drain well. (If using pre-peeled beans or canned beans, drain and rinse; reduce blending water accordingly.)
Cook quick method (optional)
If beans are still firm after soaking, simmer in lightly salted water for 10–15 minutes until just tender, then drain. Allow to cool slightly before blending.
Make Batter
Add drained beans to a blender or food processor with chopped onion (about 1 cup), 1/2 cup red bell pepper, and 1 scotch bonnet pepper (remove seeds for less heat). Add 2 tablespoons vegetable oil and up to 1/2 cup water to help the blades move. Blend in short pulses, scraping down the sides, until you have a smooth but slightly thick paste. The batter should be smooth enough to pour slowly but not watery—aim for the consistency of pancake batter.
Taste a small spoonful of the raw batter (or cook a tiny amount in a skillet to test seasoning). Add 1.5 teaspoons salt, 1 teaspoon bouillon powder (if using), 1/2 teaspoon ground black pepper, and 1 tablespoon ground crayfish (if using). If using one beaten egg or 2 tablespoons evaporated milk, fold it in now to improve color and set. Fold in 1/4 cup diced cooked bell pepper if you want texture. Mix thoroughly to combine seasoning evenly.
Prepare Molds & Steamer
Grease 6 banana leaves, ramekins, or foil cups lightly with 1 tablespoon vegetable oil. If using banana leaves, warm them briefly over a flame or in hot water to make them pliable and cut into rectangles. Fit the leaves or molds into a steamer basket or saucepan that will hold them upright.
Bring about 6 cups of water to a gentle boil in a deep pot or steamer. The water level should sit below the bottom of the molds so the MoinMoin will steam, not boil.
Assemble & Steam
Spoon batter into the prepared molds or banana leaves, filling each about three-quarters full to allow for slight expansion. If using, place a slice of hard-boiled egg and a few strips of diced bell pepper into the center of each for garnish. Seal banana leaf parcels by folding and tying with kitchen string, or cover ramekins tightly with foil.
Arrange molds in the steamer basket. Cover and steam over medium-low heat for 45–60 minutes. Check water occasionally and replenish with hot water if needed. Steam until a skewer inserted into the center comes out clean and the MoinMoin is set and springs back slightly.
Finish & Serve
Remove molds from the steamer and allow to rest 5–10 minutes. Unwrap or invert ramekins onto a plate. Serve warm as an extra side—2 pieces of MoinMoin per serving if using small/medium molds. MoinMoin pairs well with rice, garri, pap, or bread.
Store leftovers covered in the refrigerator for up to 3 days. Reheat by steaming for 10–15 minutes or microwaving briefly until heated through.
