Prepare Beans
Soak or Peel Beans
If using unpeeled black-eyed peas, soak 2 cups in warm water for 1–2 hours to soften skins for easier peeling. Alternatively, buy pre-peeled beans. Drain and rinse well.
Remove skins (if soaked)
Rub beans between your hands or against a coarse sieve and rinse repeatedly until most skins float off. Drain thoroughly in a colander.
Make Bean Batter
Blend base
Place the drained beans, chopped red bell pepper, scotch bonnet, and half the chopped onion into a blender. Add 1/4 cup water to help the blades move. Pulse and blend in short bursts until you get a smooth, thick paste. Scrape down sides as needed. The batter should be thicker than pancake batter but still pourable; add up to 2–3 tbsp water if needed.
Adjust texture
Pour the blended paste into a bowl and check texture: it should hold shape on a spoon. If overly watery, allow it to sit 5–10 minutes to let excess liquid separate and drain a little before using.
Season & Fold
Stir in 3 tbsp vegetable oil (or 2–3 tbsp palm oil for traditional flavor), crushed seasoning cube, 1 tsp salt, and 2 tsp ground crayfish (if using). Fold in the remaining chopped onion and any optional add-ins (tuna, flaked fish, chopped spring onions). Taste a small spoonful by cooking it in a skillet if you want to check seasoning — adjust salt or seasoning cube as necessary.
If using hard-boiled eggs, set them aside to place in the molds later.
Prepare Wrappers & Molds
Grease each aluminum foil square or banana leaf lightly with oil. If using foil, form shallow cups by folding edges up so the batter won't spill. If using a steaming tray or ramekins, grease them lightly instead.
Assemble
Spoon the batter into each prepared wrapper or mold, filling about three-quarters full to allow slight expansion. If using hard-boiled eggs, press half an egg into the center of two portions. For 2 pieces total, divide batter into 2 equal portions.
Steam
Set up a steamer with an inch or two of simmering water. Place the wrapped portions seam-side up in the steamer basket, cover, and steam on medium-high heat for 35–45 minutes. Check water level occasionally and replenish with hot water if needed.
To test doneness, insert a skewer into the center — it should come out clean and the moin moin should be firm to the touch. If still wet, steam an additional 5–10 minutes.
Finish & Serve
Remove the steamed moin moin from the steamer and allow to rest 5 minutes. Carefully unwrap from foil or peel away banana leaves. Serve warm with gari, pap, rice, bread, or as a side to other dishes.
