Spicy Halal Beef

Method

Rice

Rinse rice under cold water until water runs mostly clear to remove excess starch; drain well.

In a medium saucepan, heat 1 tbs butter or oil over medium heat. Add the drained rice and toast, stirring, for 1 minute.

Add 2.5 cups water and 1/2 tsp salt. Bring to a boil, then reduce heat to low, cover tightly, and simmer 12–15 minutes (or per package) until water is absorbed and rice is tender.

Remove from heat and let sit, covered, 5 minutes. Fluff with a fork before serving.

Quick Coleslaw

In a bowl, combine shredded cabbage, grated carrot, and thinly sliced red onion.

In a small bowl, whisk together 3 tbs mayonnaise, 1 tsp apple cider vinegar, 1 tsp sugar, 1/2 tsp salt and 1/4 tsp black pepper until smooth.

Pour dressing over vegetables and toss until evenly coated. Taste and adjust seasoning. Refrigerate until ready to serve (at least 10 minutes for flavors to meld).

Spicy Halal Beef

Pat the thinly sliced beef dry with paper towels to promote browning.

In a small bowl, mix 3 tbs soy sauce, 1 tbs tomato paste, 2 tbs hot chili paste, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp smoked paprika, 1 tsp black pepper, 1 tsp kosher salt, and 1 tsp brown sugar to form a marinade/sauce.

Add the minced garlic and minced ginger to the sauce, stirring to combine.

Toss the beef slices with half of the sauce mixture and let marinate 10–15 minutes at room temperature (or up to 1 hour in the fridge). Reserve the other half of the sauce for cooking.

Heat 2 tbs vegetable oil in a large skillet or wok over medium-high heat until shimmering.

Add the thinly sliced onion and sauté 2–3 minutes until softened and starting to brown.

Increase heat to high and add the marinated beef in a single layer (work in batches if necessary). Sear undisturbed for 1 minute, then stir-fry 2–3 more minutes until beef is browned but still tender.

Pour in the reserved sauce and stir, cooking 1–2 minutes until sauce thickens slightly and coats the beef. Taste and add 1 tbs lime juice to brighten and adjust salt if needed.

Remove from heat and stir in chopped cilantro if using. Sprinkle toasted sesame seeds and chopped spring onions on top if desired.
