    Prep glass

    Place a rocks glass or coupe in the freezer for a few minutes or fill it with ice water to chill while you prepare the drink. If using a rocks glass, reserve fresh ice for serving.

    Combine ingredients

    In a cocktail shaker, add 1.5 oz light rum, 0.5 oz gold rum, 0.75 oz fresh lime juice, 0.5 oz fresh grapefruit juice, 0.5 oz orange curaçao, 0.5 oz demerara or cane syrup, and 2 dashes Angostura bitters.

    Add ice and shake

    Fill the shaker with the indicated ice for shaking (about 1 cup) and securely cap it. Shake vigorously for 12–15 seconds until the outside of the shaker is very cold and well diluted.

    Prepare serving glass

    If you chilled the glass with ice water, discard the ice/water. Add the reserved serving ice (about 1/2 cup) to a rocks glass if serving on the rocks; if serving up, leave the glass chilled and dry.

    Strain

    Double-strain the shaken cocktail into the prepared glass using a Hawthorne strainer and a fine mesh strainer to remove small ice chips and pulp. For a rocks presentation, strain over fresh ice; for a coupe, strain neat.

    Garnish and serve

    Express the oils of a grapefruit twist over the drink by holding the twist skin-side down and giving it a quick squeeze, then rub the rim with the peel and drop it in or float a thin grapefruit wheel on top. Serve immediately.
