Cocktail Base

Method

Cocktail Base

  1. 1

    Make honey syrup

If you don't have honey syrup ready, combine equal parts honey and warm water (for example 1/4 cup honey + 1/4 cup warm water). Stir until fully combined and cool before using.

  2. 2

Add 2 oz white rum, 0.75 oz fresh lime juice, and 0.5 oz honey syrup to a cocktail shaker.

  3. 3

Fill the shaker with about 6 ice cubes, cap, and shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted.

  4. 4

Double-strain (optional) the shaken mixture into a chilled Collins glass or a large coupe filled with fresh ice (or leave neat in a chilled coupe if preferred).

Top & Finish

  1. 5

Slowly top the shaken rum mixture with 3 oz chilled Prosecco. Pour gently over the back of a spoon if you want a layered look.

  2. 6

Float 0.25 oz Chambord on top by pouring it slowly; it will sink slightly and create a pretty rosé tint and raspberry aroma.

  3. 7

Garnish with a lime wheel or twist on the rim and drop in 1–2 fresh raspberries if using.

  4. 8

Serve immediately with a stirrer or straw so the guest can lightly mix to taste.
