Method
Cheeses
- 1
Prepare cheeses
Remove all cheeses from the refrigerator 30–60 minutes before serving so they come to near room temperature. This improves flavor and texture. Keep the rind intact on brie and blue unless a guest prefers it removed.
- 2
Cut the cheddar into 1/3-inch thick slices or 1-inch cubes and fan a portion on the board. Cut the gouda into 1/4-inch slices and arrange overlapping. Leave the brie whole, place on the board and score the top with a knife to make it easy to spread. Crumble or break blue cheese into bite-size pieces and place in a small pile or bowl.
Cured Meats
- 3
Arrange meats
Fold prosciutto slices into loose rolls or gentle ribbons and tuck into nooks on the board. Stack or slightly overlap soppressata/salami slices in small piles. Fan chorizo slices in another area. Aim for small groupings so guests can easily pick without touching other items.
Breads & Crackers
- 4
Fresh Fruit
- 5
Wash grapes and keep them on small stems where possible; place in a small cluster on the board. Thinly slice pear and apple just before serving; fan a few slices near soft cheeses for pairing.
Dried Fruit & Nuts
- 6
Pile dried apricots and bowls or small clusters of nuts in several places around the board. Use nuts to fill gaps and add texture; avoid placing nuts under cheeses where they could get oily.
Pickles, Spreads & Extras
- 7
Place cornichons and olives in small bowls or ramekins to contain brine and place them on the board. Spoon fig jam into a small bowl and set next to soft cheeses. Put whole-grain mustard in a small dish. Drizzle honey over a small mound of walnuts or place in a tiny bowl with a honey dipper for guests to spoon over cheese.
Garnish & Assembly
- 8
Begin arranging on a large wooden board or platter. Put largest items (round brie, small bowls) first to anchor the layout. Fill in with meat folds, cheese slices, fruits, crackers and nuts, balancing colors and textures across the surface. Leave a few open spaces for dipping utensils and to keep the board from appearing overcrowded.
- 9
Tuck rosemary and thyme sprigs around cheeses and between groupings for aroma and visual interest. Scatter edible flowers or microgreens sparingly as a finishing touch. Provide cheese knives, small spoons for spreads, and labels if desired.
- 10
Serve immediately once assembled. Refill components as necessary. Keep soft cheeses refrigerated until about 30 minutes before serving and store perishables promptly after service.
