Shrimp in Garlic Sauce

    Prepare the garlic bread (optional base)

    Brush bread slices with a little olive oil, then toast in a hot skillet or oven until golden and crisp. Tear toasted bread into rough crouton-sized pieces and set aside to sprinkle over the finished dish.

    Brown garlic and shrimp

    In a large skillet over medium heat, heat olive oil and 1 tablespoon butter until shimmering. Add minced garlic and sauté 30–45 seconds until fragrant and lightly golden. Add shrimp in a single layer, season with salt, black pepper, and smoked paprika. Sauté 2–3 minutes, turning once, until shrimp are pink and just cooked through. Remove shrimp to a plate and reserve juices in the pan.

    Make the sherry-garlic sauce

    Pour in sherry to deglaze the pan, scraping up any browned bits. Simmer 1–2 minutes to reduce slightly. Stir in heavy cream and bring to a gentle simmer. Add remaining butter and simmer until sauce thickens slightly, about 2–3 minutes. If using red pepper flakes, add now.

    Finish and combine

    Return shrimp to the pan and toss to coat in the sauce. Stir in torn bread pieces to absorb the sauce and add texture. Cook for another 1–2 minutes to heat through. Adjust seasoning with salt and pepper if needed. Remove from heat and sprinkle with chopped parsley.
