Brown garlic and shrimp
In a large skillet over medium heat, heat olive oil and 1 tablespoon butter until shimmering. Add minced garlic and sauté 30–45 seconds until fragrant and lightly golden. Add shrimp in a single layer, season with salt, black pepper, and smoked paprika. Sauté 2–3 minutes, turning once, until shrimp are pink and just cooked through. Remove shrimp to a plate and reserve juices in the pan.

Make the sherry-garlic sauce
Pour in sherry to deglaze the pan, scraping up any browned bits. Simmer 1–2 minutes to reduce slightly. Stir in heavy cream and bring to a gentle simmer. Add remaining butter and simmer until sauce thickens slightly, about 2–3 minutes. If using red pepper flakes, add now.
