Prep and rice

Prep rice
Rinse the white rice under cold water until the water runs clear. In a saucepan, combine 1 cup rice, 2 cups water, and 0.25 tsp salt. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand 5 minutes.

Fluff Rice
Fluff rice with a fork and keep warm.

Season turkey with garlic powder, chili powder, cumin, salt, and pepper. Stir to coat evenly. Cook 2-3 minutes more to let flavors meld.
Assemble tortillas

Warm flour tortillas in a dry skillet over medium heat for about 20-30 seconds per side or wrap in foil and heat in a 350°F (175°C) oven for 5 minutes until warm.

Place a portion of turkey on each tortilla. Top with a spoonful of rice and beans, then add shredded lettuce, pico de gallo, and shredded cheese.

Finish with a dollop of sour cream and a dash of hot sauce to taste. Fold the tortilla into a soft taco.
