Prepare falafel mixture
Rinse and drain garbanzo beans. In a food processor, combine beans, chopped red onion, parsley, cilantro, garlic, cumin, coriander, paprika, optional cayenne, salt, and pepper. Pulse until a coarse mixture forms but still with some texture. Add olive oil and flour and pulse briefly to bind.

Chill mixture
Transfer falafel mixture to a bowl, cover, and refrigerate for 20-30 minutes to firm up for shaping.

Shape and pan-fry or bake falafel
Form mixture into small patties or shallow-fried croquettes. For frying, heat a thin layer of oil in a skillet over medium heat and cook 3-4 minutes per side until golden and crisp. For baking, preheat to 425°F (220°C), lightly oil a sheet, and bake 15-18 minutes, flipping halfway, until edges are crisp.

Warm tortillas
Warm tortillas or pita in a dry skillet or wrap in a clean towel to make them pliable.

Assemble toppings
Spread a spoonful of tzatziki crema on each tortilla. Add 2-3 falafel pieces, Greek marinated veggies, and crumbled feta. Drizzle remaining tzatziki crema over tacos if desired.
