Prepping the Ingredients

Chop the onion, carrots, and celery into small pieces. Mince the garlic cloves.

Searing the Short Ribs

In a large Dutch oven, heat the olive oil over medium-high heat. Season the short ribs with salt and black pepper. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

Sautéing the Vegetables

In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until softened. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Deglazing the Pot

Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it simmer for about 2-3 minutes.

Adding the Liquids

Add the beef broth, Worcestershire sauce, bay leaves, and thyme to the pot. Stir well to combine.

Braising the Short Ribs

Return the short ribs to the pot, ensuring they are submerged in the liquid. Bring to a boil, then cover and reduce the heat to low. Let it braise for 2.5 to 3 hours until the meat is tender.

Final Touches

Remove the short ribs from the pot and place them on a serving platter. Let them rest for a few minutes. Optionally, strain the sauce and reduce it further for a thicker consistency.
