Prepare the Batter

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the water until the mixture is smooth and well combined. The batter should be thick enough to coat the back of a spoon.

Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter in; if it sizzles and rises to the surface, the oil is ready.

Fill and Fry

Take a small amount of the filling of your choice and place it in the center of a spoonful of batter. Carefully drop it into the hot oil. Repeat with remaining batter and filling, making sure not to overcrowd the pot.

Cook Until Golden Brown

Fry the frituras for about 3-4 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.
