Transfer the juice to a fermentation vessel. Add the wine yeast and sulfur dioxide to prevent spoilage. Allow the fermentation to occur at a controlled temperature of around 12-15°C for 2-3 weeks.

Racking

Label the bottles with the vintage year (2023) and origin (Marlborough, NZ) before storing.
