Grilled Chicken

    Marinate Chicken

    Slice the chicken breast thinly (about 1/4 lb for one taco). In a bowl toss with 1/2 tbs olive oil, 1 tsp lime juice, 1/4 tsp cumin, 1/4 tsp chili powder, 1/8 tsp garlic powder, 1/4 tsp salt and 1/8 tsp black pepper. Let sit 10–15 minutes to absorb flavors (or up to 2 hours refrigerated if prepping ahead).

    Grill/Sear Chicken

    Heat a skillet or grill over medium-high heat. Add a light brush of oil on the pan. Cook the chicken slices 3–4 minutes per side until browned and internal temperature reaches 165°F (74°C). Remove from heat and let rest 2 minutes, then chop or shred into bite-size pieces.

Beans & Rice

    Warm 1/4 cup black beans and 1/4 cup cooked Mexican-style rice together in a small saucepan or microwave until hot, about 1–2 minutes. Stir in 1/2 tbs chopped cilantro and 1/8 tsp salt to taste.

Salsa

    Combine 2 tbs tomato salsa with 1 tsp finely diced red onion and 1/4 tsp minced jalapeño (if using). Stir and taste; adjust heat or salt as needed.

Guacamole

    Mash 1/4 of a ripe avocado in a small bowl. Add 1/2 tsp lime juice, 1/8 tsp salt, 1/4 tbs finely chopped cilantro (optional) and 1 tsp finely diced tomato. Mix until slightly chunky. Keep covered until assembly to prevent browning.

Cheese & Dairy

    Have 2 tbs shredded cheese and 1 tbs sour cream measured and ready for assembly.

Tortilla

    Warm the tortilla: brush with 1/2 tsp butter or oil and heat in a skillet over medium for about 30 seconds per side until pliable and lightly toasted. Alternatively, warm in a dry pan or microwave for 15–20 seconds.

Assembly

    Place the warmed tortilla flat. Layer starting with 1/4 cup warmed rice and beans mixture down the center of the tortilla (place closer to one edge if folding). Add the grilled chicken pieces (all prepared chicken for this single taco). Spoon 2 tbs salsa over the chicken. Add 2 tbs shredded cheese so it melts from the warm fillings. Dollop 1 tbs sour cream and spread 1/4 avocado guacamole along the taco. Top with 1/4 cup shredded lettuce, 2 tsp diced tomato and a sprinkle of fresh cilantro.

    Fold or roll the tortilla to form the taco. Serve immediately with an extra lime wedge if desired.
