Quesadilla filling

    Prepare tofu

    Drain the firm tofu and pat dry with paper towels. Crumble the tofu into bite-size pieces by hand or with a fork until it resembles coarse crumbs.

    Heat a large nonstick skillet over medium heat and add 1 tablespoon of oil or vegan butter. When hot, add the crumbled tofu and cook, stirring occasionally, 4–5 minutes until it begins to brown lightly.

    Add the chopped red onion and diced red bell pepper to the skillet with the tofu. Sauté 3–4 minutes until the vegetables soften and the tofu browns more evenly.

    Stir in the drained black beans and thawed corn; cook 2–3 minutes to warm through.

    Sprinkle ground cumin, smoked paprika, garlic powder, salt, and black pepper over the mixture. Stir to combine and cook 1 minute to bloom the spices.

    Remove skillet from heat and stir in chopped cilantro and fresh lime juice. Taste and adjust salt or lime if desired. Transfer filling to a bowl and set aside to cool slightly.

Tortillas & assembly

    Lay out 4 small tortillas on a clean work surface. Divide the filling evenly among them, spreading it over half of each tortilla in a thin layer (about 3–4 tablespoons each).

    Sprinkle approximately 3 tablespoons of vegan shredded cheese over the filling on each tortilla. Fold the empty half of the tortilla over the filling to form a semicircle.

    Wipe the skillet clean if needed and return it to medium heat. Add the remaining 2 tablespoons of oil or vegan butter and swirl to coat.

    Working in batches (2 quesadillas at a time depending on skillet size), place a folded quesadilla in the skillet. Cook 2–3 minutes per side, pressing gently with a spatula, until the exterior is golden brown and crisp and the vegan cheese has softened. Flip carefully and cook the other side. Adjust heat to prevent burning.

    Transfer cooked quesadillas to a cutting board and let rest 1 minute, then cut each into 3 or 4 bite-sized wedges. Keep finished quesadillas warm in a low oven (about 200°F / 95°C) while you cook remaining quesadillas.
