    Measure ingredients

    Measure 4 oz light rum, 3 oz cream of coconut and 4 oz fresh pineapple juice into a jigger or measuring cup. If using vanilla extract or simple syrup, measure those as well.

    Combine in blender

    Add the measured light rum, cream of coconut, pineapple juice and optional vanilla or simple syrup into a blender.

Ice & Blending

    Add ice

    Add about 2 cups of crushed ice to the blender on top of the liquid. If you only have ice cubes, use them and blend a little longer to crush them.

    Blend

    Blend on high for 20–30 seconds, until the mixture is smooth and thick but pourable. Pause and stir with a spoon if needed to ensure even blending.

Assemble & Garnish

    Pour

    Pour the blended Piña Colada into a chilled hurricane glass or other tall glass, leaving a little room at the top for the rum float and garnish.

    Float dark rum

    Slowly pour 0.5 oz dark rum over the back of a spoon held just above the drink surface to create a rum float that rests on top.

    Garnish

    Garnish with a pineapple wedge and a maraschino cherry on a cocktail pick. If desired, grate a light dusting of fresh nutmeg over the top for aroma and a small flourish.

    Serve

    Serve immediately with a straw and a long spoon. Stir before drinking if you want the float mixed in.
