Burrito Assembly

Grilled Chicken Marinade (makes enough for multiple petites; scale as needed)

Method

Grilled Chicken Preparation

    Marinate

    Combine olive oil, lime juice, minced garlic, ground cumin, chili powder, salt and black pepper in a bowl. Add chicken breast and coat thoroughly. Marinate at room temperature for 15 minutes or refrigerate 30 minutes to 2 hours for stronger flavor.

    Grill

    Preheat a grill or grill pan over medium-high heat. Remove chicken from marinade and grill 4-6 minutes per side, until internal temperature reaches 165°F (74°C) and juices run clear. Let rest 5 minutes, then slice or shred into 3 oz portions for a petite burrito.

Rice & Beans

    Cook white rice according to package instructions. For a petite portion measure 1/2 cup cooked rice per burrito. Keep warm.

    Warm refried beans in a small saucepan over low heat, stirring occasionally, until smooth and heated through (about 4–6 minutes). Keep warm.

Assembly & Final Warm

    Warm the tortilla: heat a dry skillet over medium heat for 30 seconds per side or microwave tortilla wrapped in a damp paper towel for 10–12 seconds to make it pliable.

    Spread 1/4 cup refried beans lengthwise down the center of the warmed tortilla, leaving ~1 inch at each end for folding.

    Top the beans with 1/2 cup cooked rice, then place the 3 oz portion of grilled chicken on top of the rice.

    Add 2 tablespoons mild salsa evenly over the chicken, sprinkle 2 tablespoons shredded cheddar cheese, and add 1 tablespoon sour cream and 1 teaspoon chopped cilantro if using.

    Fold the burrito: fold the short ends in, then fold one side over to tightly enclose the filling and roll away from you to form a compact burrito.

    Optional final heat: place the assembled petite burrito seam-side down on a preheated skillet over medium heat and brown 1–2 minutes per side to seal and crisp slightly.

    Serve immediately with a lime wedge for squeezing, and extra salsa on the side if desired.
