    Prepare rice

    If using leftover cold rice, break up any clumps with your hands or a fork so grains are separated. Measure 2 cups and set aside.

Vegetables

    Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the frozen mixed vegetables and stir-fry 2–3 minutes until thawed and just tender. Add the sliced green onions and cook 30 seconds more. Transfer vegetables to a bowl and set aside.

Protein & Add-ins

    Wipe the skillet if needed and add remaining 1 tablespoon vegetable oil. Crack the eggs into the pan and scramble quickly until just set, 30–60 seconds. If using precooked chicken or shrimp, add it now and stir 1 minute to heat through. Push eggs and protein to the side of the pan.

Sauce & Seasoning

    Add the cold, separated rice to the hot pan and spread it out. Let it sit 15–20 seconds to get a slight sear, then stir-fry, combining with eggs and protein. Return the cooked vegetables to the pan. Pour in soy sauce, oyster sauce (if using), and sesame oil. Stir continuously to evenly coat the rice and heat through, about 2–3 minutes. Season with salt and black pepper; taste and adjust soy sauce if more saltiness is desired.

Finish & Garnish

    Remove from heat. Divide the 'Make it Super' fried rice among plates or bowls. Garnish with toasted sesame seeds, additional sliced green onion, and a drizzle of Sriracha or chili sauce if you want heat. Serve immediately.
