Garlic Prawns, Steak & Grilled Chicken Recipe

The most protein you can put on a plate without a permit. Grilled steak, grilled chicken & mexican prawns made fresh for you. Our Surf & Turf & Turf dinner plate is served with salad, rice, refried beans*, guacamole and sour cream, salsa, and tortillas: Flour, Wheat, Spinach or Corn. *If refried beans are unavailable, black beans will be provided.

Method

Seafood - Mexican Garlic Prawns

    Prepare Prawns

    Pat prawns dry with paper towels and season with 1/2 tsp kosher salt and 1/4 tsp black pepper. Set aside.

    Make Garlic-Spice Base

    In a large skillet over medium-high heat, add 2 tbsp olive oil and 2 tbsp butter. When butter melts and starts to foam, add 4 cloves minced garlic and cook 30–45 seconds until fragrant but not browned.

    Cook Prawns

    Add prawns in a single layer to the hot skillet. Sprinkle 1 tsp smoked paprika, 1/2 tsp ground cumin and 1/4 tsp chili flakes over prawns. Cook 2 minutes without moving, then flip and cook another 1–2 minutes until prawns turn pink and opaque and internal temperature reaches 120–130°F (49–54°C).

    Finish

    Remove skillet from heat. Stir in 1 tbsp fresh lime juice and 2 tbsp chopped cilantro. Taste and adjust salt (add up to remaining 1/2 tsp kosher salt if needed). Keep warm for plating.

Steak - Grilled

    Bring Steak to Room Temperature

    Remove steak from fridge 20–30 minutes before grilling; pat dry with paper towels.

    Season Steak

    Rub steak with 1 tbsp olive oil. Season both sides with 1 tsp kosher salt, 1/2 tsp black pepper, 1/2 tsp garlic powder and 1/2 tsp smoked paprika, pressing seasoning into the meat.

    Grill Steak

    Preheat grill or grill pan to high heat (450–500°F / 230–260°C). Grill steak 3–5 minutes per side for medium-rare (internal temp 130–135°F / 54–57°C), longer for desired doneness. Use tongs to flip once.

    Rest and Finish

    Transfer steak to a cutting board and top with 1 tbsp butter. Tent loosely with foil and rest 5–7 minutes. Slice against the grain just before serving.

Grilled Chicken

    Prepare Chicken

    If breasts are thick, butterfly or pound to even thickness (about 1/2 inch). Pat dry.

    Season Chicken

    Brush chicken with 1 tbsp olive oil. Mix 1/2 tsp ground cumin, 1/2 tsp chili powder, 1/2 tsp garlic powder, 3/4 tsp kosher salt and 1/2 tsp black pepper and rub evenly over both sides.

    Grill Chicken

    Preheat grill or grill pan to medium-high (400–425°F / 200–220°C). Grill chicken 4–6 minutes per side, until internal temperature reaches 165°F (74°C) and juices run clear.

    Rest

    Remove chicken and let rest 3–5 minutes. Slice into strips and serve with lime wedges.

Sides & Assembly

    Warm Sides

    Warm cooked rice and refried beans (or black beans) in microwave or on stove until hot. Heat tortillas briefly on the grill or in a dry skillet (30–60 seconds per side) wrapped in a towel to keep warm.

    Plate Salad & Condiments

    Arrange 2 cups mixed salad on the plate. Spoon 1/2 cup guacamole, 1/4 cup sour cream and 1/2 cup salsa into small ramekins or on the plate. Place warmed rice (about 1 cup) and 1 cup refried beans beside the proteins.

    Assemble Proteins

    Place sliced grilled steak (about half of the cooked steak) and sliced grilled chicken (about half or as desired) on the plate next to the garlic prawns (all prawns).

    Serve

    Garnish prawns and steak with extra chopped cilantro and serve with 4 warm tortillas (choice of flour, wheat, spinach or corn) and lime wedges. Offer additional salsa, guacamole and sour cream to taste.
