Garlic Tiger Prawns

Method

Rice

    Cook rice

    Rinse the rice under cold water until water runs clear. In a small saucepan bring 1.75 cups water and 0.25 tsp salt to a boil. Add the rinsed rice, stir once, reduce heat to low, cover and simmer 15 minutes without lifting the lid. Remove from heat and let rest, covered, 5 minutes. Fluff with a fork and stir in lime zest and 1 tbsp chopped cilantro if using. Keep warm.

Refried Beans

    Prepare beans

    Heat 1 tbsp olive oil in a skillet over medium heat. Add the finely chopped onion and sauté 3–4 minutes until translucent. Add 1 minced garlic clove and cook 30 seconds until fragrant. Add drained pinto beans, 0.5 tsp ground cumin, 0.5 tsp salt and 0.25 tsp pepper. Stir and cook 1–2 minutes.

    Mash beans

    Using a potato masher or the back of a spoon, mash the beans in the skillet, adding 1–2 tbsp of the reserved bean liquid (or water) to reach a spreadable consistency. Cook another 1–2 minutes, taste and adjust seasoning. Keep warm and cover.

Garlic Tiger Prawns

    Season prawns

    Pat prawns dry with paper towels. In a bowl toss the prawns with 1 tsp salt, 0.5 tsp black pepper and 0.5 tsp smoked paprika so they are evenly coated.

    Sauté garlic and prawns

    Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat until the butter foams. Add the minced garlic (3 cloves) and sauté 20–30 seconds until fragrant but not browned. Add the seasoned prawns in a single layer and cook 1.5–2 minutes per side (depending on size) until opaque and pink with a slight sear.

    Finish prawns

    Remove skillet from heat. Squeeze 1 tbsp fresh lime juice over the prawns and sprinkle 2 tbsp chopped cilantro. Toss to coat. Transfer prawns to a plate and keep warm.

Assembly

    Warm tortillas

    Warm each flour tortilla in a dry skillet over medium heat 20–30 seconds per side or wrap in foil and place in a 300°F (150°C) oven for 5–7 minutes until pliable. Keep covered to stay warm.

    Build burrito

    Lay a warm tortilla flat. Spoon about 1/2 cup cooked rice down the center, followed by 1/3 cup refried beans spread into a strip. Top with half the garlic prawns (about 1/2 lb), 1/4 cup salsa, 1/4 cup shredded lettuce and 1/4 cup shredded cheese. Add a dollop (about 2 tbsp) of sour cream. Repeat for the second burrito with remaining ingredients.

    Fold and serve

    To fold: fold the short edges toward the center, then fold one long edge over the filling and roll tightly to enclose. If desired, place seam-side down in a hot skillet and press 30–60 seconds per side to crisp and seal. Slice in half and serve with lime wedges and extra salsa.
