Quesadilla Filling (choose one protein)

Prepare protein
If using leftover pre-cooked protein (grilled chicken, carnitas, al pastor, or mole chicken), shred or chop into bite-sized pieces so it spreads evenly in the tortilla. If preparing from raw, season 1 lb protein with salt, pepper and cumin, cook through (grill, braise or pan-sear) then shred or chop and keep warm. Measure 1 cup per quesadilla assembly batch.

If using mole, toss shredded chicken briefly in warmed mole sauce so the meat is coated but not soupy (about 2 tablespoons mole per cup chicken). For al pastor, chop into small pieces; for carnitas, pull into shreds.

Warm tortillas
Heat a large nonstick or cast-iron skillet over medium heat. Warm the corn tortillas briefly (10–15 seconds per side) to make them pliable: stack and cover with a clean towel to keep warm while you assemble quesadillas. This prevents cracking when folding.

Assemble quesadillas
Working one at a time, place a warmed corn tortilla in the skillet over medium-low heat. Sprinkle about 2 tablespoons (approximately 1/8 cup) of shredded cheese over half the tortilla, leaving a small border. Top the cheese with about 1/4 cup of the chosen protein, a teaspoon of diced onion, and a tablespoon of peppers/cilantro mixture. Add another 2 tablespoons of cheese on top of the filling (this helps the two sides stick together).

Cook until crisp
Brush or lightly brush the exposed tortilla edge with a tiny amount of oil or butter (1/4 tsp) in the pan. Fold the tortilla over the filling to make a half-moon. Cook 2–3 minutes per side over medium-low heat, pressing gently with a spatula, until golden and crisp and cheese is melted. Flip carefully and cook the second side the same amount of time. Adjust heat as needed to avoid burning while allowing cheese to melt.

Repeat assembly and cooking for remaining tortillas and filling. Use about 1 cup total filling and 1 cup cheese to make 4 quesadillas (2 tortillas each), or scale to desired servings.
Accompaniments / Sauces

Slice cooked quesadillas into wedges (2–3 wedges per half-moon). Serve immediately topped with a sprinkle of crumbled queso fresco, extra chopped cilantro, and a lime wedge. Offer salsa roja or salsa verde, sour cream/crema and pickled jalapeños on the side for guests to add to taste.

Taste the filling and adjust seasoning with salt and pepper as needed before assembling. If using plain shredded chicken, a pinch more cumin or a squeeze of lime brightens the flavor.
