Method

    Warm tortillas

    Heat a large skillet or griddle over medium heat. Warm each flour tortilla 20–30 seconds per side until pliable and lightly spotted. Keep warm wrapped in a clean kitchen towel.

    Reheat or combine meats

    If your meats are already cooked and chilled: heat a large skillet over medium with 1 tablespoon neutral oil. Add the grilled chicken, ground beef and chorizo (if using). Warm, tossing occasionally, until heated through (about 4–6 minutes). Season with 1/2 tsp salt and 1/4 tsp pepper, taste and adjust. If meats were prepared fresh per sections below, proceed after cooking.

    Assemble burritos

    Lay a warmed tortilla flat. Spoon approximately 200 g (about 3/4–1 cup) of mixed meats down the center of the tortilla, leaving 2 inches clear at each end. Spoon 2–3 tablespoons salsa roja (and 1 tablespoon salsa verde if using) over the meat. Sprinkle 1 tablespoon chopped cilantro and squeeze 1/2 lime wedge over the filling (optional). Fold the sides in, then roll tightly from the bottom to form a burrito. Repeat for remaining tortillas.

    Finish (optional crisping)

    For a lightly crisp exterior: heat 1 teaspoon oil in a skillet over medium. Place burrito seam-side down and cook 1–2 minutes per side until golden and sealed. Serve immediately with extra salsa and lime wedges.

    Combine olive oil, minced garlic, lime juice, chili powder, cumin, paprika, 1/2 tsp salt and 1/4 tsp pepper in a bowl. Add the chicken and coat thoroughly. Marinate 15–30 minutes at room temperature or up to 4 hours refrigerated.

    Preheat a grill or grill pan to medium-high. Grill chicken 4–6 minutes per side (thicker pieces may take longer) until internal temperature reaches 74°C (165°F). Let rest 5 minutes, then slice or dice into bite-sized pieces. Transfer to a plate and keep warm.

Ground Beef Seasoning (if cooking fresh)

    Heat 1 tablespoon oil in a skillet over medium-high. Add chopped onion and cook until translucent, 3–4 minutes. Add minced garlic and cook 30 seconds until fragrant.

    Add ground beef and break up with a spatula. Cook until no longer pink, 6–8 minutes. Drain excess fat if desired.

    Stir in chili powder, cumin, 3/4 tsp salt, 1/4 tsp pepper and 2 tablespoons water or beef broth. Simmer 2–3 minutes until flavors meld. Taste and adjust seasoning. Keep warm.
