Risotto

Cook rice
Add 1 cup Arborio rice and stir to coat for 1–2 minutes until edges look translucent. Pour in 60 ml dry white wine and stir until mostly absorbed.

Simmer with stock
Add hot vegetable stock 100–150 ml at a time, stirring frequently and allowing rice to absorb liquid before adding more. Continue for 18–20 minutes until rice is tender but still slightly al dente and mixture is thick and creamy. You may not need all the stock; aim for a thick risotto that holds shape when chilled.

Finish risotto
Stir in 40 g grated Parmesan, season with 1 tsp salt and 1/2 tsp black pepper. Taste and adjust seasoning. Spread risotto in a shallow tray, cover, and chill in refrigerator for at least 2 hours (or until firm) — this makes forming balls easier.

Prepare 4 small cubes of fresh mozzarella and keep chilled. These will be placed in the center of each arancini for a melty core. If you prefer no filling, skip this step.
Tomato Relish

Combine 250 g finely diced ripe tomatoes, 1/4 finely chopped red onion, 1 minced garlic clove, 1 tbs olive oil, 1 tsp red wine vinegar, 1/2 tsp sugar, 1 tbs chopped fresh basil, 1/2 tsp salt and 1/4 tsp black pepper in a bowl. Stir to combine and let sit at room temperature for 20–30 minutes to allow flavors to meld. Taste and adjust seasoning. Keep refrigerated if preparing earlier.

Form balls
With chilled risotto, wet your hands lightly. Divide risotto into 4 equal portions. Flatten each portion in your palm, place a cube of mozzarella in the center (if using), and mold the risotto around it to form a compact ball (~70–90 g each). Ensure seams are sealed.

Bread the arancini
Set up three shallow bowls: 1) 1/2 cup all-purpose flour; 2) 2 beaten eggs; 3) 1 cup breadcrumbs. Lightly coat each ball in flour, shake off excess, dip into beaten eggs, then roll in breadcrumbs until evenly covered. For extra-crispy coating, repeat egg and breadcrumb step once more.

Fry
Pour vegetable oil into a deep frying pan or pot to a depth of about 3–4 cm and heat to 175°C (350°F). If you don't have a thermometer, test with a small breadcrumb — it should sizzle and brown within 30–40 seconds. Fry arancini in batches (do not overcrowd) for 3–4 minutes, turning occasionally, until golden brown and crisp. Use a slotted spoon to transfer to a wire rack or paper towel-lined tray to drain and rest for 2 minutes.
Garnish & Serve

Place one arancino on each plate (4 total). Spoon 1–2 tbs tomato relish next to or on top of each ball. Sprinkle a little extra grated Parmesan and garnish with a fresh basil leaf. Serve immediately while hot so mozzarella remains melty and the crust is crisp.
