Prepare the Seafood
Clean and devein the large shrimp. Soak the mussels in water to ensure they are clean and discard any that do not close when tapped. Slice the calamari into rings and cut the white fish into bite-sized pieces.
Cooking the Paella

Sauté Vegetables
In a large paella pan or skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and bell pepper and cook for an additional 2-3 minutes.

Add Tomatoes and Spices
Add the diced tomato, saffron, and smoked paprika to the pan. Cook for another 2 minutes until the tomato softens.

Add Rice
Stir in the Bomba or Arborio rice, ensuring it is well coated with the oil and spices. Cook for 1-2 minutes.

Pour in Broth
Gradually add the fish or seafood stock to the pan. Season with salt and black pepper to taste. Bring to a simmer, then reduce the heat to low.

Add Seafood
Carefully arrange the shrimp, mussels, calamari, and white fish on top of the rice mixture. Sprinkle green peas over the top.

Cook the Paella
Cover the pan with a lid or aluminum foil and let it cook on low heat for about 20 minutes, or until the rice is tender and has absorbed most of the liquid. Do not stir while cooking.
