    Prepare the Mussels

    Rinse the mussels under cold water and scrub the shells to remove any dirt or debris. Discard any mussels that are open and do not close when tapped.

    Sauté Aromatics

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and diced shallots, sautéing until fragrant and soft, about 2-3 minutes.

    Steam the Mussels

    Add the rinsed mussels to the pot along with the dry white wine, salt, and black pepper. Cover the pot and steam for about 5-7 minutes, shaking the pot occasionally, until the mussels have opened. Discard any mussels that remain closed.

    Finish with Parsley

    Remove the pot from heat and stir in the chopped parsley. Serve the mussels immediately with the cooking liquid.

Fries

    Prepare the Potatoes

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch, then drain and pat dry with paper towels.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Fry the potatoes in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While still hot, sprinkle the fries with salt to taste. Serve hot alongside the steamed mussels.
