Prepare the Lobster
Bring a pot of salted water to a boil. Add the lobster tails and cook for about 8-10 minutes until they are bright red and cooked through. Remove from water, let cool, and then remove meat from the shells. Chop the lobster meat into bite-sized pieces.

Sauté the Vegetables
In a large pot, heat a tablespoon of oil over medium heat. Add the chopped shallots, garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are soft.

Combine Ingredients
Add the tomato paste to the sautéed vegetables and cook for another 2 minutes. Then pour in the fish or lobster stock, dry sherry, bay leaves, thyme, salt, and black pepper. Bring to a boil.

Simmer and Add Cream
Reduce the heat to low and let the soup simmer for about 20 minutes. Stir in the heavy cream and let it heat through for an additional 5 minutes.
