Calamari

Method

Prepare the Marinara Sauce

  1. 1

    Cook the Garlic

In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  2. 2

    Add Tomatoes and Season

Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, and black pepper. Bring to a simmer and let cook for about 15-20 minutes, stirring occasionally.

  3. 3

    Finish the Sauce

Once the sauce has thickened slightly, remove from heat and set aside to cool.

Prepare the Calamari

  1. 4

    Mix Dry Ingredients

In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder.

  2. 5

    Prepare the Wet Mixture

In another bowl, whisk together the egg and milk until well combined.

  3. 6

    Heat the Oil

In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 7

    Coat the Calamari

Dip each calamari ring first in the wet mixture, allowing excess to drip off, then coat in the dry mixture, pressing lightly to adhere.

  5. 8

    Fry the Calamari

Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve

  1. 9

    Plate the Dish

Arrange the fried calamari on a serving platter and serve hot with the marinara sauce on the side for dipping.
