Prepare the Steak
Remove the filet mignon from the refrigerator and allow it to come to room temperature for about 30 minutes before cooking.

Season the Steak
Rub the filet mignon with olive oil, and season generously with salt, black pepper, and fresh rosemary on both sides.

Rest the Steak
Remove the steak from heat and let it rest for 5-10 minutes before serving to allow juices to redistribute.

Cook the Garlic
While the potatoes are boiling, peel and smash the garlic cloves, then add them to a small saucepan with the butter. Cook over low heat until fragrant, about 5 minutes.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add the garlic and butter mixture, heavy cream, salt, and black pepper. Mash until smooth and creamy.
