Preparing the Calamari

Clean and Dry the Calamari
If using whole squid, clean and cut it into rings. Rinse the calamari rings under cold water and pat them dry with paper towels.

Set Up Breading Station
In one bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and paprika. In a second bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.

Bread the Calamari
Dip each calamari ring first into the flour mixture, then into the beaten eggs, and finally coat with panko breadcrumbs, ensuring an even coating.
Frying the Calamari

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Working in batches, carefully add the breaded calamari rings to the hot oil. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Simmer the Sauce
Add the crushed tomatoes, dried oregano, salt, black pepper, fresh basil, and sugar to the saucepan. Stir well and let simmer for 15-20 minutes.

Plate the Calamari
Arrange the crispy calamari on a serving plate. Serve with the marinara sauce on the side for dipping and lemon wedges for squeezing over the calamari.
