Mousse Preparation

Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

Separate the Eggs
Carefully separate the egg yolks from the whites. Place the yolks in a large mixing bowl and the whites in a separate clean bowl.

Whisk Egg Yolks
Add the granulated sugar and vanilla extract to the egg yolks. Whisk together until the mixture is pale and creamy.

Combine Chocolate and Yolks
Gradually fold the melted chocolate mixture into the egg yolk mixture until fully combined.

Beat Egg Whites
Using a mixer, beat the egg whites with a pinch of salt until stiff peaks form.

Chill the Mousse
Spoon the mousse mixture into serving glasses or bowls and refrigerate for at least 2 hours or until set.

In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.

Using a mixer, beat the cream mixture on medium-high speed until stiff peaks form.

Once the mousse is set, top each serving with a generous dollop of whipped cream before serving.
