Directions

  1. 1

    Prepare the Oven and Ramekins

Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and dust with flour to prevent sticking. Place them on a baking sheet for easy handling.

  2. 2

    Melt Chocolate and Butter

In a medium saucepan over low heat, combine the unsweetened chocolate and unsalted butter. Stir constantly until melted and smooth. Remove from heat and let cool slightly.

  3. 3

    Mix Sugar and Eggs

In a large mixing bowl, whisk together the granulated sugar, eggs, and egg yolks until thick and pale. Add the vanilla extract and mix until combined.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously. Sift in the flour and salt, and gently fold until just combined. Be careful not to overmix.

  5. 5

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  6. 6

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center remains soft and slightly jiggly.

  7. 7

    Cool and Serve

Remove from the oven and let the cakes cool for 1 minute. Carefully run a knife around the edges of each ramekin, then invert onto individual plates. Serve immediately with a scoop of vanilla ice cream.
