Prepare the Spice Mixture
In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper.

Season the Fish
Rub the spice mixture evenly over both sides of the mahi-mahi fillets.

Cook the Fish
In a large skillet, heat olive oil over medium-high heat. Once hot, add the mahi-mahi fillets and sear for about 3-4 minutes on each side, or until cooked through and blackened. Remove from heat and let rest.
Mango Salsa

Combine Ingredients
In a medium bowl, combine diced mango, red bell pepper, red onion, and chopped cilantro.

Dress the Salsa
Add lime juice and salt to the mango mixture. Toss gently to combine and set aside to let flavors meld.
Coconut Rice

Rinse the Rice
Rinse jasmine rice under cold water until water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, combine rinsed rice, coconut milk, water, and salt. Bring to a boil over medium heat, then reduce to low, cover, and simmer for about 15 minutes or until rice is tender and liquid is absorbed.

Fluff the Rice
Remove from heat and let sit covered for 5 minutes. Fluff with a fork before serving.
