    Make simple syrup

    Combine 1 cup granulated sugar and 1 cup water in a small saucepan over medium heat. Stir until the sugar is fully dissolved and the mixture just reaches a gentle simmer. Do not boil vigorously. Once sugar is dissolved, remove from heat.

    Infuse citrus zest

    Add the lemon zest and lime zest to the hot simple syrup. Cover the saucepan and let the zest steep in the syrup for 15–20 minutes to extract oils and aroma.

    Strain and flavor

    After steeping, strain the syrup through a fine mesh sieve or cheesecloth into a heatproof container to remove zest. While the syrup is still warm, whisk in 2 tablespoons lemon juice, 2 tablespoons lime juice, 1 teaspoon citric acid, and 1 teaspoon natural lemon-lime or orange extract if using. Stir until completely dissolved. Taste and adjust: add up to 1/2 teaspoon more citric acid for brighter acidity or a little more extract for stronger lemon-lime character.

    Cool syrup

    Allow the finished syrup to cool to room temperature, then refrigerate until thoroughly chilled (about 30–60 minutes) if not using immediately. The syrup will keep refrigerated in a sealed container for up to 2 weeks.

Assembly / Serving

    Mix Sprite-style soda

    For each 1 cup (8 fl oz) serving, combine 1/4 cup (60 ml) of the chilled citrus syrup with 1 cup (8 fl oz / 240 ml) of cold carbonated water in a tall glass. Stir gently once or twice to combine without losing too much fizz. Adjust syrup to taste: use 3 tbsp for lighter sweetness or up to 1/3 cup for a sweeter soda.

    Serve

    Add ice cubes to the glass if desired. Garnish with a lemon slice and a lime slice. Serve immediately while fizzy.

    Batch instructions

    To make a larger batch, mix the chilled syrup and carbonated water at a ratio of 1 part syrup to 4 parts soda water (by volume). For example, for approximately 5 cups finished soda, combine 1 cup syrup with 4 cups chilled carbonated water. Gently stir to combine and keep chilled; pour over ice and garnish as desired.
